I've always loved to cook, especially Catalan dishes, but also those from Mallorca and Valencia. In my blogs and books, I combine cooking with history, another of my great passions. I enjoy researching the origins of dishes and finding similarities between them in different regions or countries. This book isn't just a recipe book; it's also a collection of little historical tidbits about the dishes. Not all the recipes are here —there are many more— but I hope you like the ones I've chosen, as I consider them the most traditional. I've cooked with passion some of the iconic dishes that have lost popularity and are no longer found in restaurants or even in home kitchens, often due to a lack of time to prepare them. I've also included recipes featuring some very characteristic local products protected by PDO (Protected Designation of Origin) and PGI (Protected Geographical Indication) status.
